Ghau ni Rotli is cooked in every Parsi home to be eaten with all
our food except rice dishes. It is less fattening than white bread
if cooked without ghee. and is a high fiber food
        
       
         GHAU NI ROTLI
         Unleavened Bread
        
         INGREDIENTS:
         Makes approx 20
        
         1/2 kg whole meal wheat flour
         2 tbsp butter or pure ghee
         1 tsp salt
         boiling water to make a pliable dough
        
        
         Mix all the above ingredients with enough
         boiling water to make a pliable dough. Knead
         well, or better still, lift the dough and throw it
         hard on the floured table several times till the
         texture is smooth.
        
         Keep the dough covered with an inverted dish for about an hour.
         Roll into a sausage, cut into 1/2 inch pieces, flatten and roll flat
         and cook on a griddle. Do not allow the rotlies to get brown and
         over cooked. Brush with pure ghee or butter, very lightly, fold
         and keep in an airtight tin. Store the tin in a warrn oven till
         required. These rotlies, if kept in an airtight tin, will stay soft for
         24 hours.
