Parsi Cuisine Volume 2 – Meat & Eggs

Parsis love eggs. Given any cooked vegetable or even meat and you break eggs on top. Cook and serve it becomes a rich dish, the flavor of the “sunny side up” egg combined with the flavor of the meat is heavenly. We parsis like to call the sunny side up egg as half-fried eggs.
Parsi Indian Heritage and historical background is given wherever appropriate. I have tried to emphasize how valid and important Parsi Food is even now in the 21st century. For example the “Jardaloo ma Murghi” is as nutritious and healthy as it was in the 18th century. Apricots are fruits for the kings is what I tell my kids – They are delicious with any meat.
