  1. Dear Rita, this is to introduce myself as Marzban Bilimoria from Kolkata. I have recently started catering to the Parsi community here and would like some advise on how to calculate what ingredients and quantity for items say for 100 persons so as to avoid wastage and unnecessary costs.

    How to calculate ingredient quantity is difficult indeed. With experience you can find out. Perhaps other members can help you with their experience.

    My advice is – Better to cook a little more so your customers and guests dont get disappointed. If you run out of food it is not going to be good. Your good name and good reputation will make your business successful.

    Being here in US usually caterers freeze the leftovers or give the food away to the guests.
